  • 1 lb salted cod (soaked overnight)
  • 3 tbsp extra virgin olive oil
  • 1 medium onion (thinly sliced)
  • 4 cloves garlic (minced)
  • 1 red bell pepper (sliced)
  • 1 green bell pepper (sliced)
  • 1 can (14 oz) diced tomatoes (with juice)
  • 2 tbsp capers
  • 1/2 cup black olives (sliced)

  1. Soak the salted cod in cold water overnight, changing the water a couple of times.
