  • 1 cup red lentils
  • 2 medium carrots, diced
  • 1 medium onion, diced
  • 4 cloves garlic, minced
  • 6 cups low-sodium vegetable broth
  • 1 tsp cumin
  • 1 tsp paprika
  • Juice of 1 fresh lemon
  • 2 tbsp chopped parsley
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat. Add diced onions and sauté until translucent (about 5 minutes). Stir in minced garlic and cook for another minute until fragrant.
  2. Add diced carrots and rinsed red lentils to the pot. Sauté for about 2 minutes to combine flavors.
  3. Pour in vegetable broth along with cumin and paprika. Bring to a boil, then reduce heat and simmer uncovered for about 20 minutes until lentils are tender.
  4. Use an immersion blender to puree the soup until smooth or adjust consistency by adding more broth if needed.
  5. Season with salt and pepper to taste. Serve hot, garnished with fresh lemon juice and parsley.
