  • 3 lbs bone-in lamb shoulder
  • 4 cloves garlic, minced
  • 2 large sweet onions, sliced
  • 3 tbsp olive oil
  • 2 tsp paprika
  • 1 tsp cumin
  • 1 tsp black pepper
  • 1 cup plain yogurt
  • Juice of 1 lemon
  • Salt to taste

Instructions

  1. In a bowl, mix yogurt, lemon juice, garlic, paprika, cumin, salt, and black pepper to create a marinade.
  2. Place the lamb shoulder in a resealable bag or container. Coat thoroughly with the marinade and refrigerate for at least four hours or overnight.
  3. Preheat the oven to 300°F (150°C).
  4. Arrange sliced onions in a roasting pan as a bed for the lamb.
  5. Place marinated lamb on top of the onions, drizzle with olive oil, cover with foil, and roast for about three hours.
  6. Uncover and roast for an additional hour until golden brown.
