  • 4 medium eggplants
  • 1 lb ground beef or lamb
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 2 medium tomatoes, diced
  • 2 tsp olive oil (for sautéing)
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp paprika
  • ½ tsp cumin
  • 2 tbsp extra virgin olive oil (for drizzling)
  • Fresh parsley for garnish

Instructions

  1. Preheat oven to 400°F (200°C) and grease a baking dish.
  2. Halve each eggplant lengthwise and scoop out some flesh to create space. Sprinkle with salt and let sit for 10 minutes.
  3. In a skillet, heat olive oil over medium heat. Sauté onions until translucent, then add garlic and cook until fragrant.
  4. Add ground meat along with salt, pepper, paprika, and cumin; cook until browned.
  5. Stir in diced tomatoes and let simmer for five minutes.
  6. Fill each eggplant half generously with the meat mixture and place in the baking dish; drizzle with extra virgin olive oil.
  7. Bake for 30-35 minutes until eggplants are tender.
