  • 8 oz cream cheese, softened

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking pan.
  2. Grate the zucchini and squeeze out excess moisture using a clean towel.
  3. In a bowl, whisk together flour, sugar, cinnamon, nutmeg, baking soda, and salt.
  4. In another bowl, beat together eggs and vegetable oil; stir in the grated zucchini.
  5. Gradually combine the dry ingredients into the wet mixture until just mixed.
  6. Pour the batter into the prepared pan and bake for 25-30 minutes or until a toothpick comes out clean.
  7. Allow cooling completely before frosting with cream cheese frosting made by mixing softened cream cheese and powdered sugar until smooth.
