  • 8 oz cream cheese, softened
  • 1 cup crawfish tail meat, fresh or thawed
  • 3 large eggs
  • 1/4 cup green onions, finely chopped
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup white wine (for beurre blanc)
  • 1/2 cup heavy cream (for beurre blanc)
  • 1/2 cup unsalted butter, cold and cubed
  • 1 shallot, finely chopped

Instructions

  1. Preheat your oven to 325°F (160°C) and grease an 8-inch springform pan.
  2. In a mixing bowl, blend the softened cream cheese until smooth. Gradually add eggs one at a time while mixing. Stir in green onions and Parmesan until well combined. Gently fold in crawfish.
  3. Pour the mixture into the prepared pan and bake for 40-45 minutes until slightly jiggly in the center.
  4. For the beurre blanc sauce, simmer white wine and shallots in a saucepan until reduced by half. Add heavy cream and simmer until thickened. Whisk in cold butter until smooth; season with salt and pepper.
  5. Allow the cheesecake to cool before slicing and serving with beurre blanc.
