  • 8 oz wide egg noodles (uncooked)
  • 1 can (10.5 oz) cream of chicken soup
  • 1 cup low-sodium chicken broth
  • 2 cups frozen mixed vegetables (peas, carrots, corn)
  • 2 cups shredded cheddar cheese
  • 1 cup breadcrumbs
  • 1 tsp garlic powder
  • Freshly cracked black pepper to taste

Instructions

  1. Preheat oven to 350°F (175°C) and spray a 9×13-inch baking dish with nonstick cooking spray.
  2. Cook the wide egg noodles in boiling salted water until al dente; drain and set aside.
  3. In a large bowl, mix diced chicken, cooked noodles, cream of chicken soup, chicken broth, frozen vegetables, garlic powder, and pepper.
  4. Pour into the prepared baking dish and top with half of the cheddar cheese and breadcrumbs.
  5. Bake for 30-35 minutes until bubbly and golden brown on top.
  6. Serve warm with a side salad or crusty bread.
