  • 2 medium potatoes (about 300g)
  • 1 cup cheddar cheese, grated (about 100g)
  • 6 corn or flour tortillas
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • 1 tsp paprika or cumin (optional)

Instructions

  1. Boil peeled and cubed potatoes in salted water for about 15-20 minutes until tender. Drain and return to pot.
  2. Mash potatoes with salt, pepper, and half of the cheddar cheese until creamy.
  3. Warm tortillas in a skillet for about 30 seconds per side to make them pliable.
  4. Spoon two tablespoons of the potato mixture onto each tortilla, sprinkle with remaining cheese, then roll tightly.
  5. Heat olive oil in a skillet over medium heat. Cook taquitos seam-side down until crispy and golden brown, about 3-5 minutes total.
  6. Transfer to paper towels to absorb excess oil. Serve hot with dipping sauces.
