  • 1 tsp black pepper
  • 4 cloves garlic, minced
  • 1 large onion, chopped
  • 1 cup low-sodium beef broth
  • 2 lbs Yukon Gold potatoes, peeled and cubed
  • 1/2 cup unsalted butter
  • 1/2 cup heavy cream

Instructions

  1. Preheat the oven to 325°F (163°C).
  2. Season the beef roast with salt and pepper on all sides.
  3. In a large oven-safe skillet or Dutch oven, heat oil over medium-high heat and sear the roast for 3-4 minutes per side until browned.
  4. Remove the roast and sauté garlic and onion in the same skillet until fragrant.
  5. Return the roast to the skillet, add beef broth, cover tightly, and place in the oven.
  6. Roast for about 3 hours until fork-tender.
  7. Meanwhile, boil potatoes in salted water until tender (15-20 minutes).
  8. Drain potatoes, return to pot, add butter and cream, then mash until smooth.
