  • 1 cup crushed Oreo cookies
  • 1 cup fresh raspberries
  • 8 oz full-fat cream cheese, softened
  • 1/2 cup unsalted butter, room temperature
  • 3/4 cup granulated sugar
  • 1 cup all-purpose flour
  • 1 large egg
  • 1 tsp vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a bowl, beat together softened cream cheese and half of the sugar until smooth.
  3. In another bowl, whisk together flour and crushed Oreos.
  4. Cream butter and remaining sugar in a separate bowl until light; add the egg and vanilla extract.
  5. Gradually mix the dry ingredients into the wet mixture. Gently fold in raspberries and cream cheese mixture.
  6. Scoop tablespoon-sized portions onto the prepared sheets. Bake for 12–15 minutes until golden around edges. Cool before serving.
