  • 2 fresh salmon fillets (6 oz each)
  • 4 cups romaine lettuce, chopped
  • 4 strips thick-cut bacon
  • 1 cup cherry tomatoes, halved
  • 1 ripe avocado, diced
  • 2 hard-boiled eggs, chopped
  • ¼ cup blue cheese crumbles (optional)
  • Juice of 1 lemon
  • Salt and pepper to taste

Instructions

  1. In a skillet over medium heat, cook bacon until crispy. Drain on paper towels and chop into pieces.
  2. Season salmon with salt and pepper. In the same skillet, sear skin-side down for about 4-5 minutes on each side until cooked through. Let cool before slicing.
  3. Chop romaine lettuce and place it in a large serving bowl.
  4. Add chopped bacon, halved cherry tomatoes, diced avocado, chopped eggs, and sliced salmon on top of the lettuce.
  5. Drizzle with fresh lemon juice and toss gently to combine all ingredients.
