Marinated Octopus – Insalata di Polpo is a refreshing Mediterranean dish that brings together tender octopus marinated in a zesty blend of olive oil, fresh lemon juice, and aromatic herbs.   • 2 pounds fresh octopus
  • 1/2 cup extra virgin olive oil
  • 1/4 cup freshly squeezed lemon juice
  • 3 garlic cloves, crushed
  • 1/4 cup chopped fresh parsley
  • 2 tablespoons capers
  • Salt and black pepper to taste

Instructions

  1. Clean the octopus under cold water, removing the beak and ink sac. Optionally tenderize by gently whacking with a meat mallet.
  2. Boil a large pot of salted water. Add the octopus and simmer for about 30-40 minutes until tender. Check doneness with a fork.
  3. Remove the octopus from the pot and let it cool on a cutting board; pat dry with paper towels.
  4. In a mixing bowl, whisk together olive oil, lemon juice, crushed garlic, parsley, capers, salt, and pepper.
  5. Slice the cooled octopus into bite-sized pieces and toss them in the marinade. Cover and refrigerate for at least one hour (up to overnight).
  6. Serve chilled on plates drizzled with extra olive oil or lemon juice if desired.
