  • 1 cup cooked quinoa
  • 1 cup canned chickpeas (drained and rinsed)
  • 1 cup cherry tomatoes (halved)
  • 1 cup cucumber (sliced)
  • 1 cup bell peppers (diced)
  • ½ cup crumbled feta cheese
  • 3 tbsp olive oil
  • 2 tbsp lemon juice (freshly squeezed)
  • 1 tbsp honey

Instructions

  1. Rinse quinoa under cold water. Combine with two cups of water or vegetable broth in a saucepan, bring to a boil, then reduce heat to low. Cover and simmer for about 15 minutes until fluffy.
  2. If using dried chickpeas, soak overnight, then cook until tender. If using canned chickpeas, drain and rinse.
  3. Chop cherry tomatoes, cucumber, and bell peppers into bite-sized pieces.
  4. In a bowl or jar, mix olive oil, lemon juice, and honey; shake or whisk until combined.
  5. In a large bowl, combine quinoa, chickpeas, chopped veggies, and feta cheese. Drizzle dressing over the top and toss gently until coated.
  6. Pack into lunch boxes or meal prep containers for easy grab-and-go meals.
