Turkish Boza is a traditional, thick, and creamy fermented drink that envelops you in warmth with its sweet-tangy flavor and delightful aroma. Ingredients

  • 1 cup short-grain rice
  • 1 cup granulated sugar (adjust to taste)
  • 3 cups fresh water
  • 1 tsp active dry yeast
  • 1 tsp ground cinnamon (optional)

Instructions

  1. Rinse rice under cold water until clear. Soak in clean water for at least 4 hours or overnight.
  2. Drain and cook rice in 3 cups of fresh water over medium heat until tender, about 20 minutes.
  3. Allow to cool, then blend until smooth, adding more water if needed.
  4. In a bowl, mix the blended rice with sugar and yeast. Cover loosely and let ferment at room temperature for 1-3 days.
  5. Chill in the refrigerator for at least 4 hours before serving.
  6. Serve in glasses, optionally garnished with chopped hazelnuts and a sprinkle of cinnamon.
