  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Slice the eggplants in half lengthwise and scoop out some flesh to create a cavity for stuffing. Sprinkle with salt and let sit for 15 minutes to draw out bitterness.
