Turkish Asure, affectionately known as Noah’s Pudding, is a traditional dessert that beautifully combines grains, dried fruits, and nuts into a creamy, comforting dish. Each spoonful delivers a delightful medley of textures and flavors, making it perfect for both special occasions and everyday indulgence.   • 1 cup wheat berries
  • 4 cups water
  • 1 cup dried apricots, chopped
  • 1 cup raisins
  • 1 cup sugar
  • 1 cinnamon stick
  • 2 tsp vanilla extract
  • ½ cup pomegranate seeds
  • ¼ cup shredded coconut

Instructions

  1. Rinse wheat berries under cold water and soak overnight.
  2. In a large pot, combine soaked wheat berries with water. Bring to a boil over medium heat. Reduce heat to low and simmer for about an hour until tender.
  3. Stir in chopped dried fruits and sugar; simmer for an additional 15 minutes.
  4. Add the cinnamon stick and vanilla extract; allow to bubble for another 10 minutes until thickened.
  5. Remove from heat, discard the cinnamon stick, and cool slightly before serving.
  6. Garnish with pomegranate seeds and shredded coconut before serving chilled or at room temperature.
