½ cup unsalted butter (melted)
¾ cup granulated sugar (divided)
16 oz cream cheese (softened)
½ cup sour cream
2 large lemons (zest and juice)
1 cup fresh raspberries (pureed)
1 tsp vanilla extract
3 large eggs
Instructions
Preheat the oven to 325°F (160°C). In a bowl, combine graham cracker crumbs, melted butter, and ¼ cup sugar. Press this mixture into the bottom of a springform pan to form the crust.
In another bowl, beat softened cream cheese until smooth. Gradually mix in the remaining sugar. Add sour cream, lemon juice, lemon zest, and vanilla extract; blend until creamy.
Incorporate eggs one at a time on low speed until just combined.
Gently swirl raspberry puree into the cheesecake batter before pouring it over the crust.
Bake for 50-60 minutes until set but slightly jiggly in the center.
Allow to cool at room temperature before refrigerating for at least four hours or overnight.
