Ingredients

  • 2 cups fresh strawberries, hulled and halved
  • 2 tablespoons honey or maple syrup
  • 2 tablespoons unflavored gelatin powder
  • 1 tablespoon freshly squeezed lemon juice
  • ½ cup water

Instructions

  1. Wash strawberries under cool water, remove stems, and slice in half. Pat dry.
  2. Blend strawberries with honey (or maple syrup) and lemon juice until smooth.
  3. In a small saucepan over low heat, dissolve gelatin powder in water, stirring for about 3 minutes until fully dissolved.
  4. Mix the blended strawberry mixture with the dissolved gelatin until well combined.
  5. Pour into silicone molds or an 8×8-inch baking dish lined with parchment paper.
  6. Chill in the refrigerator for at least 2 hours, or until set. Cut into pieces if using a baking dish.
