  • 1/4 cup coconut flour
  • 3 tbsp poppy seeds
  • 2 tsp baking powder (gluten-free)
  • Zest of 1 lemon
  • 2 large eggs
  • 1/2 cup unsweetened applesauce
  • 1/3 cup honey or maple syrup
  • 1/4 cup fresh lemon juice

Instructions

  1. Preheat oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, whisk together almond flour, coconut flour, baking powder, poppy seeds, and lemon zest.
  3. In another bowl, whisk the eggs, applesauce, honey or maple syrup, and fresh lemon juice until smooth.
  4. Combine the wet mixture with the dry ingredients and stir gently until just combined; avoid overmixing.
  5. Spoon the batter into the muffin cups until they are two-thirds full. Optionally sprinkle extra poppy seeds on top.
  6. Bake for 20-25 minutes or until golden brown; a toothpick inserted should come out clean. Let cool before serving.
