  • 3 cups fresh peaches, peeled and chopped
  • 1/4 cup granulated sugar
  • 2 tablespoons brown sugar
  • 1 teaspoon cinnamon
  • Oil for frying (about 2 cups)
  • 1 cup powdered sugar
  • 2 tablespoons milk

Instructions

  1. In a bowl, combine chopped peaches with granulated sugar, brown sugar, and cinnamon. Let sit for 10 minutes to meld flavors.
  2. Lay an egg roll wrapper flat on a clean surface. Place about 2 tablespoons of peach filling in the center. Fold the bottom corner over the filling, tuck in the sides, and roll tightly to seal.
  3. Heat oil in a deep pan or fryer to 350°F (175°C). Fry egg rolls until golden brown on all sides, about 4 minutes each side.
  4. While cooling on paper towels, whisk together powdered sugar and milk to make the glaze.
