  • 2 large nori sheets
  • 1 cup sushi rice
  • 3 tbsp rice vinegar
  • 1/2 cup sliced cucumbers
  • 1/2 cup sliced carrots
  • 1/2 avocado, sliced
  • 1/2 cup cooked chicken, tofu, or shrimp (your choice)
  • Optional: Soy sauce, wasabi, or spicy mayo for serving

Instructions

  1. Prepare the sushi rice according to package instructions. Once cooked, fold in rice vinegar while warm.
  2. Chop vegetables and protein into bite-sized pieces.
  3. Lay a nori sheet shiny side down on a clean surface. Place 1/2 cup of sushi rice in the center and press gently into a circle.
  4. Add vegetables and protein on top of the rice.
  5. Fold two opposite sides of the nori over the filling, then tuck in the bottom edge to secure everything snugly.
  6. Toast seam-side down on medium heat for about 2 minutes per side until crispy.
  7. Slice diagonally for presentation and serve with dipping sauces.
