  • 1 pound boneless chicken thighs
  • 1/4 cup low-sodium soy sauce
  • 2 tablespoons sake (or white wine)
  • 1 tablespoon grated ginger
  • 3 cloves garlic, minced
  • 1/2 cup cornstarch
  • Vegetable oil for frying

Instructions

  1. Cut chicken thighs into bite-sized pieces. In a bowl, combine soy sauce, sake, ginger, and garlic. Add chicken and marinate for at least 30 minutes.
  2. Drain excess marinade from chicken. In another bowl, mix cornstarch with salt and pepper.
  3. In a deep pan, heat vegetable oil to 350°F (175°C).
  4. Coat each piece of marinated chicken in cornstarch and fry in batches until golden brown (about 5-7 minutes). Avoid overcrowding the pan.
  5. Remove chicken from oil and place on paper towels to absorb excess oil. Serve hot with your favorite dipping sauce.
