Ingredients

Scale
  • 1 cup short-grain rice (Arborio or sushi rice)
  • 4 cups full-fat milk
  • ¾ cup sugar
  • 1 tsp vanilla extract
  • 1 cinnamon stick

Instructions

  1. Rinse the rice under cold water until the water runs clear to remove excess starch.
  2. In a medium saucepan, combine rinsed rice with 2 cups of water. Bring to a boil over medium heat, then reduce heat and simmer covered for about 15 minutes until tender.
  3. Stir in 4 cups of milk, sugar, and the cinnamon stick. Increase heat slightly and bring to a gentle boil while stirring frequently.
  4. Reduce heat again and let it simmer uncovered for about 20-25 minutes until thickened; stir often to prevent sticking.
  5. Remove from heat and stir in vanilla extract. Adjust sweetness if desired.
  6. Transfer pudding to serving bowls and allow it to cool before garnishing with additional cinnamon or nuts.
