  • 1 lb lamb chops or beef skewers
  • 2 medium eggplants
  • 4 garlic cloves, minced
  • 1 cup thick Greek yogurt
  • 2 tbsp freshly squeezed lemon juice
  • 1 tsp cumin powder
  • Salt and pepper to taste
  • Olive oil for drizzling

Instructions

  1. Prepare the marinade by mixing Greek yogurt, minced garlic, cumin powder, salt, pepper, and lemon juice in a bowl. Add lamb or beef and marinate for at least one hour.
  2. Preheat your oven to 400°F (200°C). Slice eggplants in half lengthwise and roast on a parchment-lined tray until soft and slightly charred (30-35 minutes).
  3. Grill marinated meat over medium-high heat until cooked through and charred (10-15 minutes), turning occasionally.
  4. Scoop roasted eggplant flesh into a food processor, add salt, pepper, and olive oil; blend until smooth.
  5. Spread eggplant purée on plates and top with grilled meat. Garnish with fresh herbs if desired.
