  • 1 package (16 oz) 15 Bean Mix
  • 1 medium onion, chopped
  • 4 cloves garlic, minced
  • 2 medium carrots, diced
  • 2 stalks celery, chopped
  • 4 cups low-sodium vegetable broth
  • 2 bay leaves
  • 1 tsp dried thyme
  • 1 tsp ground cumin
  • Salt & pepper to taste

Instructions

  1. Rinse the 15 bean mix under cold water, checking for debris.
  2. Set the Instant Pot to sauté mode and heat a splash of olive oil. Add onion, garlic, carrots, and celery; sauté for about five minutes until fragrant.
  3. Add the rinsed beans and vegetable broth to the pot. Stir in bay leaves, thyme, cumin, salt, and pepper.
  4. Seal the lid and set the Instant Pot to high pressure for 30 minutes.
  5. After cooking, allow a natural pressure release for about 10 minutes before switching to quick release.
  6. Remove bay leaves and stir before serving.
