  • 2 lb beef chuck roast
  • 8 oz provolone cheese, sliced
  • 1 sheet puff pastry (thawed)
  • 2 cups low-sodium beef broth
  • 1 tsp garlic powder
  • 1 tsp dried thyme
  • Salt and pepper to taste
  • 1 egg (for egg wash)

Instructions

  1. Preheat oven to 325°F (165°C). Season the beef roast with salt and pepper, then sear in a skillet over medium-high heat until browned on all sides.
  2. Place the roast in a baking dish, pour beef broth over it, and sprinkle with garlic powder and thyme. Cover tightly with foil.
  3. Bake for about 2 hours or until tender. Let rest for 10 minutes before shredding the beef.
  4. Roll out the puff pastry on a floured surface and cut into squares. Fill each square with shredded beef and top with provolone cheese before folding over.
  5. Arrange on a baking sheet lined with parchment paper, brush with egg wash, and bake at 400°F (200°C) for 20-25 minutes until golden brown.
  6. Serve hot with au jus on the side.
