Horchata is a creamy, refreshing Mexican beverage that combines the richness of rice with the warm spice of cinnamon. Ingredients

  • 1 cup long-grain white rice
  • 4 cups water (divided)
  • 2 cinnamon sticks
  • 1 cup milk (dairy or non-dairy)
  • ½ cup sugar (adjust to taste)
  • 1 teaspoon vanilla extract

Instructions

  1. Rinse rice under cold water until clear. Soak in a bowl with 2 cups of water and cinnamon sticks for at least 4 hours or overnight.
  2. Drain the soaked rice and discard the cinnamon sticks. Blend rice with remaining 4 cups of fresh water until smooth.
  3. Strain the mixture through cheesecloth or a fine mesh sieve into a pitcher to separate liquid from solids.
  4. Stir in milk, sugar, vanilla extract, and additional cinnamon if desired. Mix well.
  5. Chill in the refrigerator for at least 1 hour before serving over ice.
