Ingredients

Scale
  • 1 cup sweet rice flour (Mochiko)
  • 1/2 cup water
  • 1/4 cup granulated sugar
  • 1 cup cooked adzuki beans (mashed)
  • 1/8 tsp salt
  • 2 tbsp cornstarch (for dusting)
  • 2 tbsp sweetened condensed milk (optional for filling)

Instructions

  1. 1. Prepare the Red Bean Filling: Rinse adzuki beans, boil until tender (about 1 hour), drain, mash, and mix with sweetened condensed milk if desired.
  2. 2. Make the Mochi Dough: In a microwave-safe bowl, mix sweet rice flour, sugar, salt, and water until smooth. Cover loosely and microwave for 2 minutes. Stir and microwave again for another minute until thickened.
  3. 3. Shape the Mochi: Dust a work surface with cornstarch; transfer hot dough and let cool slightly. Divide into small portions, flatten each piece into a disk.
  4. 4. Fill with Red Beans: Place about one tablespoon of filling in the center of each disk, pinch edges to seal, and roll into balls.
  5. 5. Chill: Place mochi on a cornstarch-dusted tray and refrigerate for about an hour until firm.
  6. 6. Serve: Enjoy chilled or at room temperature.
