  • 1 medium onion, chopped
  • 4 garlic cloves, minced
  • 1 tbsp fresh ginger, grated
  • 1 (14 oz) can crushed tomatoes
  • 1 (14 oz) can full-fat coconut milk
  • 2 tsp garam masala
  • 1 tsp cayenne pepper (adjust to taste)
  • Salt and pepper to taste

Instructions

  1. Chop the onion and mince the garlic and ginger.
  2. Optional: Sear the chicken thighs in a skillet over medium heat until golden brown.
  3. In the slow cooker, combine chicken (browned or raw), onion, garlic, ginger, crushed tomatoes, coconut milk, and spices. Stir well.
  4. Cover and cook on low for 6 hours or high for 3 hours.
  5. Shred the chicken directly in the pot using two forks and mix everything together.
  6. Serve hot over basmati rice or with naan bread, garnished with cilantro if desired.
