  • 1 cup bell peppers, sliced (red or green)
  • 3 garlic cloves, minced
  • 1 can (14 oz) whole peeled tomatoes
  • 1 tsp paprika
  • 1 tsp ground cumin
  • 1/4 tsp cayenne pepper (adjust to taste)
  • 4 large eggs
  • 1/4 cup fresh cilantro or parsley, chopped
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add onions and bell peppers; sauté until softened (about 5 minutes). Stir in minced garlic until fragrant.
  2. Sprinkle in paprika, cumin, and cayenne pepper; cook for another minute.
  3. Pour in canned tomatoes (crushing them gently) along with salt and pepper. Simmer for about 10 minutes until thickened.
  4. Create small wells in the sauce and crack an egg into each well. Cover the skillet and simmer for about 5 minutes until eggs are set but yolks remain runny.
