  • 1 pound ground sausage (spicy or mild)
  • 2 cups stuffing mix
  • 1 cup cranberry sauce (homemade or store-bought)
  • 2 large eggs
  • 1/2 cup finely chopped onion
  • 1/2 cup finely chopped celery
  • 1 tablespoon fresh sage, chopped
  • 1 tablespoon fresh thyme, chopped
  • Salt and pepper to taste
  • 1 tablespoon olive oil for sautéing

Instructions

  1. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. In a skillet over medium heat, add olive oil and sauté chopped onion and celery until soft, about 5 minutes.
  3. Add ground sausage to the skillet, breaking it apart as it cooks until browned, approximately 8 minutes.
  4. In a large bowl, combine the sausage mixture with stuffing mix, eggs, herbs, salt, and pepper; mix well and let sit for 10 minutes.
  5. Shape the mixture into small balls (about 2 tablespoons each) and place them on the prepared baking sheet.
  6. Bake for 25 minutes or until golden brown; serve warm drizzled with cranberry sauce.
