  • 1 medium cucumber, sliced
  • 1 cup cherry tomatoes, halved
  • 1/4 medium red onion, thinly sliced
  • 2 tbsp extra virgin olive oil
  • 1 tbsp freshly squeezed lemon juice
  • 1 tsp Dijon mustard
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper.
  2. Place the salmon on the sheet, season with salt and pepper, and bake for 15-20 minutes until flaky.
  3. While the salmon bakes, chop mixed greens, slice cucumber, halve cherry tomatoes, and thinly slice red onion.
  4. In a small bowl, whisk together olive oil, lemon juice, Dijon mustard, salt, and pepper.
  5. Flake the cooked salmon into large chunks.
  6. In a large bowl or platter, combine mixed greens, cucumbers, cherry tomatoes, red onion slices, and flaked salmon. Drizzle with dressing and toss gently.
  7. Serve immediately or chill slightly before serving for enhanced flavors.
