  • 9 oz fresh ravioli (cheese or spinach filling)
  • 1 cup cherry tomatoes, halved
  • 1 cup asparagus spears, trimmed and cut into bite-sized pieces
  • 3 garlic cloves, minced
  • 2 tbsp extra virgin olive oil
  • ¼ cup fresh basil, chopped
  • ¼ cup fresh parsley, chopped
  • Salt and pepper to taste

Instructions

  1. Rinse cherry tomatoes and trim asparagus.
  2. Cook ravioli in salted boiling water for 3-4 minutes until they float. Drain and reserve half a cup of pasta water.
  3. In a skillet over medium heat, add olive oil and sauté minced garlic for 30 seconds. Add cherry tomatoes and asparagus; cook until softened (about 5 minutes). Season with salt and pepper.
  4. Gently fold cooked ravioli into the skillet with vegetables. Stir in reserved pasta water to achieve desired sauciness.
  5. Remove from heat; toss in chopped basil and parsley before serving. Drizzle extra olive oil on top.
