  • 1 cup canned pumpkin puree
  • 3/4 cup granulated sugar (divided)
  • 2 large egg yolks
  • 2 tsp pumpkin spice blend
  • 1 tsp vanilla extract
  • 3 large egg whites
  • 1/4 tsp cream of tartar

Instructions

  1. Preheat your oven to 350°F (175°C). Bake the pre-made pie crust according to package instructions until golden brown.
  2. In a bowl, mix together pumpkin puree, 1/2 cup sugar, egg yolks, pumpkin spice blend, and vanilla extract until smooth.
  3. Pour the mixture into the baked crust and bake for about 30 minutes or until set but slightly jiggly in the center.
  4. While baking, whip egg whites with cream of tartar until soft peaks form. Gradually add the remaining sugar and beat until stiff peaks form.
  5. Spread the meringue over hot pumpkin filling and create swirls for presentation. Bake again for about 10 minutes until meringue is lightly browned.
  6. Allow to cool before slicing and serving.
