  • 4 medium ripe peaches (about 2 cups pureed)
  • 1/2 cup granulated sugar
  • 1 cup heavy cream
  • 1 tablespoon gelatin powder
  • 1 teaspoon vanilla extract

Instructions

  1. Peel, pit, and chop the peaches. Blend until smooth and reserve 1/4 cup for garnish.
  2. In a saucepan, combine peach puree with sugar over low heat until the sugar dissolves completely.
  3. Bloom gelatin in two tablespoons of cold water for 5 minutes, then dissolve it in the microwave for about 10 seconds and stir into the peach mixture.
  4. Whip heavy cream to soft peaks and gently fold half into the peach mixture.
  5. Carefully fold in the remaining whipped cream, then pour into serving glasses.
  6. Chill for at least 2 hours until set, then garnish with reserved chopped peaches before serving.
