  • 4 (6 oz) white fish fillets (cod or tilapia)
  • 1 cup freshly grated Parmesan cheese
  • 1 cup panko breadcrumbs
  • 2 tbsp fresh parsley, chopped
  • 2 tbsp fresh dill, chopped
  • 2 tbsp lemon juice
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Grease a baking dish with nonstick spray or olive oil.
  3. In a medium bowl, mix the panko breadcrumbs, Parmesan cheese, chopped herbs, salt, pepper, and olive oil until well combined.
  4. Pat dry the fish fillets and place them in the greased baking dish. Drizzle lemon juice over each fillet and generously sprinkle the breadcrumb mixture on top.
  5. Bake for 15-20 minutes until the fish is opaque and flakes easily with a fork; the topping should be golden brown.
