  • 3 medium ripe bananas (about 1.5 cups mashed)
  • 1 cup canned pumpkin puree
  • 1.5 cups whole wheat flour
  • 0.75 cup golden raisins
  • 0.33 cup honey or maple syrup
  • 2 large eggs
  • 1 tsp baking soda
  • 0.5 tsp baking powder
  • 1 tsp cinnamon
  • 0.5 tsp nutmeg
  • Pinch of salt

Instructions

  1. Preheat your oven to 350°F (175°C) and grease or line a loaf pan with parchment paper.
  2. In a mixing bowl, mash the ripe bananas until smooth but slightly chunky. Stir in the pumpkin puree until well combined.
  3. Add honey (or maple syrup) and beat in eggs one at a time, mixing well.
  4. In a separate bowl, whisk together whole wheat flour, baking soda, baking powder, cinnamon, nutmeg, and salt. Gradually fold into wet ingredients until just combined.
  5. Gently stir in the soaked golden raisins.
  6. Pour batter into the prepared loaf pan and smooth the top. Bake for 50-60 minutes or until a toothpick inserted comes out clean.
  7. Allow cooling slightly before transferring to a wire rack to cool completely.
