  • 6 oz Doritos Chips (Nacho Cheese or Cool Ranch)
  • 1 lb lean ground beef (80% lean)
  • 1 packet taco seasoning (about 1 oz)
  • 1 can (15 oz) black beans, rinsed and drained
  • 1 can (14.5 oz) fire-roasted diced tomatoes
  • 8 oz cream cheese, softened
  • 2 cups shredded cheese (cheddar and Monterey Jack blend)
  • 2 green onions, chopped

Instructions

  1. Preheat your oven to 350°F (175°C). Lightly spray a large baking dish with nonstick cooking spray.
  2. In a skillet over medium heat, brown the ground beef until fully cooked; drain excess fat.
  3. Stir in taco seasoning along with black beans and diced tomatoes; simmer for about five minutes.
  4. Remove from heat and mix in softened cream cheese until melted and combined.
  5. Layer half of the crushed Doritos in the bottom of the baking dish. Pour half of the beef mixture on top and sprinkle with some shredded cheese. Repeat layers with remaining ingredients.
  6. Cover with foil and bake for 25 minutes. Remove foil and bake an additional five minutes until bubbly and golden brown.
