  • 1 lb beef sirloin, thinly sliced
  • 8 oz egg noodles
  • 1 cup sour cream (full-fat)
  • 8 oz fresh mushrooms, sliced (cremini or button)
  • 1 medium onion, finely chopped
  • 2 cups low-sodium beef broth
  • 2 tbsp Worcestershire sauce
  • 1 tsp garlic powder
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Gather and prepare all ingredients: chop onions and mushrooms; slice beef against the grain.
  2. Cook egg noodles in salted boiling water according to package instructions until al dente. Drain and set aside.
  3. In a large skillet over medium-high heat, add olive oil and sear beef strips for about 2-3 minutes until browned. Remove from skillet.
  4. In the same skillet, add more oil if needed and sauté onions and mushrooms until soft (about 5 minutes).
  5. Stir in beef broth, Worcestershire sauce, garlic powder, salt, and pepper; bring to a gentle simmer.
  6. Lower heat and mix in sour cream until well combined; return beef to the skillet to coat in the sauce.
  7. Serve over prepared egg noodles with extra sauce drizzled on top.
