  • 2 cups fresh baby spinach
  • 1 cup shredded cheddar cheese
  • 2 cups enchilada sauce (store-bought or homemade)
  • 2 tsp olive oil
  • ¼ cup fresh cilantro, chopped (optional garnish)

Instructions

  1. Preheat your oven to 375°F (190°C) and spray a baking dish with nonstick cooking spray.
  2. In a skillet over medium heat, add olive oil and sauté diced bell peppers until tender (about 5 minutes). Stir in black beans and spinach until the spinach wilts.
