  • 1 can (14.5 oz) diced tomatoes (with herbs if preferred)
  • 1 can (15 oz) kidney beans (rinsed and drained)
  • 1 medium onion (finely chopped)
  • 3 cloves garlic (minced)
  • 1 tsp ground cumin
  • Salt & pepper (to taste)

Instructions

  1. Gather and prepare all ingredients by chopping the onion and mincing the garlic.
  2. In a large bowl, mix ground beef, breadcrumbs, onion, garlic, chili powder, cumin, salt, and pepper until just combined.
  3. Roll the mixture into approximately twenty one-inch meatballs.
  4. Heat oil in a large skillet over medium heat; brown the meatballs for about five minutes until golden.
  5. Remove meatballs and add diced tomatoes and kidney beans to the skillet; stir until bubbling.
  6. Return meatballs to the skillet, reduce heat to low, and let simmer for 25 minutes.
