  • 4 bone-in chicken thighs (about 1.5 lbs)
  • 4 slices thick-cut bacon
  • 2 cups red wine (Burgundy or Pinot Noir)
  • 8 oz cremini mushrooms, sliced
  • 2 medium carrots, sliced
  • 1 cup pearl onions, peeled
  • 4 cloves garlic, minced
  • 3 sprigs fresh thyme
  • 1 cup low-sodium chicken stock
  • 2 tbsp all-purpose flour

Instructions

  1. Prepare the ingredients by chopping vegetables and dicing bacon.
  2. In a large Dutch oven over medium heat, cook bacon until crispy; remove and set aside.
  3. Brown seasoned chicken thighs in the bacon fat until golden brown; remove and set aside.
  4. Sauté onions, garlic, carrots, and mushrooms in the same pot until softened.
  5. Return chicken to the pot; add red wine and chicken stock to cover. Add thyme.
  6. Cover and simmer on low heat for about 60 minutes until chicken is tender.
