  • 1 cup quinoa
  • 1 large ripe mango, diced
  • 1/2 cup red bell pepper, diced
  • 1/2 cup cucumber, diced
  • 1/2 small red onion, finely chopped
  • 1/4 cup fresh cilantro, chopped
  • Juice of 2 limes
  • 2 tbsp extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Rinse quinoa under cold water. In a saucepan, combine quinoa with 2 cups of water or vegetable broth. Bring to a boil, then reduce heat and simmer for 15 minutes until liquid is absorbed.
  2. While quinoa cooks, chop the mango, bell pepper, cucumber, and red onion. Combine in a large bowl with cilantro.
  3. In a small bowl, whisk together lime juice and olive oil; season with salt and pepper.
  4. Fluff cooked quinoa with a fork and let cool slightly before adding to the veggie bowl. Pour dressing over and mix gently until combined.
  5. Optionally chill in the refrigerator for 30 minutes to enhance flavors before serving.
