  • 2 ripe kiwis, peeled and diced
  • 1 cup granulated sugar, divided
  • 1/2 cup unsalted butter (1 stick), softened
  • 1 cup all-purpose flour, sifted
  • 2 large eggs, at room temperature
  • 1 tsp baking powder
  • 1 tsp vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and grease an 8×8 inch baking dish.
  2. In a bowl, mix diced kiwis with half of the sugar and let sit to release juices.
  3. In another bowl, cream softened butter with the remaining sugar until fluffy. Add eggs one at a time, mixing well after each addition, then stir in vanilla extract.
  4. In a separate bowl, whisk together flour and baking powder. Gradually add to the wet mixture until just combined.
  5. Gently fold in the kiwi mixture into the batter and pour into the prepared dish.
  6. Bake for 25-30 minutes or until golden brown on top; a toothpick should come out clean. Let cool before slicing into bars.
