  • 1 cup pearl barley
  • 1 medium cucumber, diced
  • 1 cup cherry tomatoes, halved
  • 1/2 medium red onion, thinly sliced
  • 1/2 cup fresh parsley, chopped
  • 1/2 cup feta cheese, crumbled
  • 1/3 cup extra virgin olive oil
  • 2 tbsp freshly squeezed lemon juice
  • 1 tbsp honey

Instructions

  1. Rinse pearl barley under cold water. In a saucepan, combine barley with 3 cups of water. Bring to a boil, then reduce heat to low and simmer for 30-40 minutes until tender. Drain and cool.
  2. While the barley cooks, prepare the vegetables: dice cucumber, halve cherry tomatoes, and slice red onion.
  3. In a small bowl, whisk together olive oil, lemon juice, and honey to make the dressing.
  4. In a large bowl, combine cooled barley with prepared vegetables, feta cheese, and parsley.
  5. Drizzle the dressing over the salad and toss gently until well mixed. Adjust seasoning as needed.
  6. Serve immediately or let sit for 30 minutes to enhance flavors.
