  • 4 medium zucchinis
  • 1 lb lean ground beef or turkey
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 (14.5 oz) can diced tomatoes
  • 1 tbsp chili powder
  • 1 tsp cumin
  • 1 cup shredded cheddar or Monterey Jack cheese
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C). Grease a baking dish with nonstick spray.
  2. Halve zucchinis lengthwise and scoop out the insides, reserving the flesh for later use.
  3. In a skillet over medium heat, brown the ground meat and onions for about 5-7 minutes until onions are translucent. Add garlic and cook for another minute.
  4. Stir in diced tomatoes, reserved zucchini flesh, chili powder, cumin, salt, and pepper. Simmer for 5 minutes.
  5. Fill each zucchini half with the mixture and top with cheese.
  6. Bake for 25-30 minutes until zucchinis are tender and cheese is bubbly.
