  • 2 lbs Yukon Gold potatoes, peeled and chopped
  • 1 head garlic
  • 1 cup mascarpone cheese
  • 4 tbsp unsalted butter
  • 1/2 cup whole milk (or heavy cream)
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C). Wrap garlic cloves in foil with a drizzle of olive oil and roast for 30 minutes.
  2. Boil the chopped Yukon Gold potatoes in salted water until fork-tender (15-20 minutes).
  3. Drain the potatoes and return them to the pot. Squeeze the roasted garlic out of its skins into the pot.
  4. Add mascarpone cheese, butter, and milk (or cream). Mash until smooth and creamy.
  5. Season with salt and pepper to taste, then serve garnished with fresh herbs or a drizzle of olive oil.
